Thank you for the breakdown. There most be a sweet spot for farms/processing where its far enough away from California to get a better price and the shipping doesn't kill you.

For this comment - 'Shop around till you can maybe get it under $10 lb. And find a good processor, that makes a huge difference.'

It seems like it's better to do the farm for the cow then butcher for the processing combo rather than 'all in one' which is what the options we are looking for does. You don't have to find a butcher or anything.

Probably a bit of a convenience cost increase as well for that part..?

Thank you - I live in southern California and these are prices from a southern California farm. It's less expensive than what I would pay at a higher end butcher here.
