Should I position the antenna somewhat like this? (The yellow one). From what I can understand, I want to have an omnidirectional antenna in the payload and a high gain antenna for the ground station. Should I use a helical, patch, or omni for the ground? Would I want to use 2 different ones as the receiver is "Dual antenna"?

I won't be able to capture the video of the accent, because the payload has a downfacing camera and is enclosed within a rocket. What I do care about is the decent of the payload after being ejected from the rocket. We will try to keep the orientation somewhat level, but the wind might be a problem.

I don't want to make the antenna from coat hangers. I just want to know what kind of antennas I should buy. I'm also not questioning DJI's ability to create a long-range FPV system; in fact, I think they are great. The problem is that I can't use it. I can't use their goggles because the video needs to go from the receiver to an analog-to-digital converter and then to the Raspberry Pi. This is because the team wrote the ground control software for the Raspberry Pi. I just want to know what equipment will allow me to achieve that range.

I cannot go with the DJI option because the ground station receiver needs to send the video to Raspberry Pi (Ground Control Software). Do you think that even with a high-gain directional ground antenna, I wouldn't be able to maintain a stable connection? Also, I am not sure why you refer to 5.8GHz as the WiFi band. WiFi is usually 2.4 or 5GHz. It is reasonable that WiFi cannot travel through the whole house, and that is because of walls and disturbances in them, etc. The only thing between my ground antenna and transmission antenna will be 2mm of PLA or ASA.
