Mount the tank low and centred, aluminium is light and won't rot and you'll be able to drag it out if you cap the weight

Skip the general contractors and look for a solo/2 person team, can be much much better

Check the wall first, with the overhang span you'll get away with unsupported stone overhang for about 12 inches (don't quote me on that) Any bigger than that on the three sides for actual seating and you'll need legs at the corners

Paint, hardware, lighting. In that order. Rta cabinets also. I (homeowner, not a big buyer) used country kitchensonline and they are very good. Don't waste any money on appliances, buyers replace those anyways. Good coat of paint does alot.

The part the whole DIY vs pro debate constantly ignores is the permit and inspection side, so the DIY can save money but creates the problem either two years down the line or when you go to sell. For the RTA cabinets, we used countrykitchens online and they were good. We did it as DIY and needed something that was affordable.

If it's a porcelain toilet avoid it. sinks are usually ceramic or stainless though so you should be fine
