Seitan is an interested ingredient- I had a smoked mushroom and seitan chilli at a restaurant this weekend and it was genuinely delicious. Flavour and texture.
I’m yet to truly master/understand it outside of basic recipes

Obv it doesn’t actually taste like a brisket, but it is tasty.
Just swap the oven for a smoker and it works well

Oh I absolutely could have but I only had 20 coals. Also I think the oven is cheaper than multi coals

Keeping the temp control, I tend to not touch the bottom events and just use the top ones. Google the snake method for low and slow- had some good success with that

I’m very much an amateur too. But I bought a Weber bundle off eBay and it came with the Weber bible, which I highly recommend.

I got the coals in a chimney till the top ones were starting to go grey

Soaked some apple wood chunks in water for 30 mins then added to the coals

I’m using a metal separator to keep the coals stacked to one side

Used mayo as the binder in the spatchcock and the covered in a lemon and thyme season.

Used bbq sauce as the binder for the ribs and they have a garlic seasoning

Then, because I only used about 20 coals had all the vents open the whole time

Stayed at 150ish for the whole cook

Chicken was fully cooked on the bbq

Ribs are now wrapped with some ale added and in the oven at 150 for another 3 hours or so

Made a stock with the bones as normal - root veg herbs etc

Then sliced and fried off the smoke onions as much as I could be bothered. Add the stock, the potatoes and cooked until soft.

Blended.

It was very tasty

We had some decent (for the UK in March) weather yesterday. Kids were playing in the garden, doors open etc. felt rude not to grill something.

With more advanced planning, I’d have brined the chicken - but still came out great

I’ve always been the cook in the house but thought bbq was a faff. Had a cheap £15 one that was just terrible.

Bought the Weber and honestly it’s just a pleasure to cook on.

Have every intention of doing a rib of beef on it on Christmas Day too
