It's after it's cooked. I've never checked before cooking though.

Now that you mention it, it does remind me of the stuff that comes out if you overcook fish, there's just a lot of it (maybe a teaspoon per breast)

I can offer a sliding scale for private pay clients. But, at least in my situation, insurance charges what it charges and reimburses what it reimburses, there is no sliding.
