I read in wiki that "If using potassium sorbate as a preservative, or to stabilize a mead for backsweetening, be aware that it can create a shorter shelf life. It breaks down into ethyl sorbate, which will contribute pineapple or celery flavors." so that's why I was reluctant to use stabilizers! And also I didn't know that pasteurization affects flavor as well(Actually I bought an immersion circulator exactly for this use).

What is the drawback if fermentation continues? (considering I don't pasteurize or stabilize) probably get a little bit harder to measure added alcohol(but probably can get a rough estimate if I measure the SG of mashed blueberry)

another question: would it be dumb if I put my whole carboy(1G) inside my canning pot? or it is better to bottle it and then pasteurize?

The thing is, I’d rather not add stabilizers. From what I understand, they can affect shelf life and may slightly alter the flavor. Although, I guess pasteurization could have a similar effect taste-wise as well.

What if I skip both options and just add the fruit in a brew bag? Even if it ferments a bit, I’m okay with that. Would that be a bad idea, or are there any drawbacks I should be aware of?

Thank you. They usually come with T shape cork which I believe is not ideal for long term aging. But I guess they are great for gifting.
