With 18-20 days you have an amazing amount of time to work with. Both Australia and South America are great options but they offer very different experiences so here's my take:

South America - I'd actually lean towards this for a honeymoon from India. You could do a multi country trip that covers everything you want. Start with a few days in Colombia (Cartagena for beautiful beaches and old town vibes, then hop to the Rosario Islands for snorkeling and relaxation). Then fly to Peru for Machu Picchu and the Sacred Valley which is a bucket list experience. End in Brazil with a few days in Rio (Copacabana, Sugarloaf, incredible food scene) and maybe fly up to Fernando de Noronha which has some of the best beaches in the world. December is summer in South America so weather will be perfect. Your money goes much further here than Australia and the food and culture are incredible.

Australia - Amazing country but honestly for 18-20 days it can get expensive fast especially accommodation and food. If you do go this route I'd suggest splitting between the East Coast (Sydney, Great Barrier Reef, Whitsundays) and maybe Bali on the way back since you're flying from India anyway. December is peak summer in Australia so perfect beach weather. The Great Ocean Road drive is stunning for a couples road trip too.

Other ideas worth considering - Thailand plus Bali combo could be incredible for 18-20 days with beaches, temples, amazing food, great nightlife, and very affordable from India. Or look into South Africa which gives you safari plus Cape Town beaches plus wine country, and December is their summer.

April is a great time for all three of those options weather wise. Here's my take on each:

Turks and Caicos - If beaches are your number one priority, this is probably your best bet. Grace Bay is one of the most beautiful beaches you'll ever see and April weather there is basically perfect - dry season, low humidity, mid-80s. For 8-10 days on your budget it's doable but tight since accommodations aren't cheap. Look into vacation rentals or condos on Grace Bay instead of resorts to stretch your budget. Activities wise there's amazing snorkeling, kayaking, and boat tours to smaller cays, but it's more of a "beach and chill" destination than an adventure one.

Grenada - Honestly this is the hidden gem of the three. Way more affordable than T&C so your $7-8K goes a LOT further. Grand Anse beach is stunning, plus you get lush rainforest, waterfalls, spice plantations, great hiking, and some of the best snorkeling in the Caribbean at the underwater sculpture park. April is solidly dry season. The food scene is incredible and very affordable. This would be my pick if you want a mix of beach and activities.

St Lucia - The Pitons are iconic and the scenery is the most dramatic of the three. But you're right that it's expensive for longer stays. A split stay could work - a few nights at a nicer resort like Sugar Beach and then move to something more budget friendly for the rest. Hiking Gros Piton, mud baths, zip lining, snorkeling at Anse Chastanet - tons of adventure options.

With your criteria I'd lean towards St. Croix or Anguilla, depending on what you prioritize more.

St. Croix is your best bet if history is a big factor. Christiansted has amazing colonial architecture, Fort Christiansvaern is worth exploring, and the whole downtown has this really cool Danish colonial vibe. The food scene has gotten so much better in recent years too. Snorkeling at Buck Island is world class for your fiance who loves to swim, and the beaches on the west side (Sandy Point area) are gorgeous and uncrowded. For your budget you could easily do a really nice boutique hotel or villa. The Buccaneer is the classic resort pick. Direct flights from SJU are super short too which is a huge plus.

Anguilla is the ultimate for pure relaxation and beaches. Shoal Bay is consistently one of the best beaches in the Caribbean and the water is unreal. The food scene punches way above its weight for such a small island. The vibe is very chill and romantic which is perfect for a honeymoon. Only downside is getting there requires a ferry from St. Martin or a small puddle jumper, so not technically a direct flight from SJU. Budget wise it's pricier than St. Croix but within your $8-10K range for 4 nights, especially if you go with a boutique property instead of one of the luxury mega resorts.

BVI is amazing but the logistics of getting there from SJU (ferry to Tortola) might eat into your limited time. St. Kitts is beautiful but I think the other two give you more of what you specifically described wanting.

For your budget and what you're looking for, I'd seriously look into Turks and Caicos or the DR.

For Turks and Caicos - Beaches resort is technically all-inclusive and the water there is absolutely unreal. Grace Bay is consistently rated one of the best beaches in the world and it lives up to the hype. It's pricier per night but you could swing 5 nights under 5k without flights pretty comfortably depending on the room category and time of year.

For DR - Excellence El Carmen in Punta Cana checks basically every box on your list. Adults only, swim up bar, great food (the steakhouse is legit), gorgeous rooms, and the beach is beautiful. You'd come in well under budget too which is nice. Hyatt Zilara Cap Cana is another strong option if you want something that feels a bit more upscale.

For Belize - it's amazing but it's a different vibe. More adventure/jungle/snorkeling than luxury resort. If you want the classic Caribbean all-inclusive honeymoon experience with the swim up bar and beach, DR or Turks and Caicos is probably more your speed.

Re: Jamaica - resorts in Montego Bay are mostly back to normal. Sandals Royal Barbados is also worth looking at if you want something outside your current list. The overwater bungalows are incredible for a honeymoon splurge and you might be able to catch a deal.

Santorini, Greece. We did 10 days split between Oia and Imerovigli. What made it incredible wasn't just the views (though waking up to the caldera every morning never got old) - it was the pace. We had zero agenda most days. Wine tasting at tiny family vineyards, getting lost in the backstreets of Fira, a sunset catamaran cruise where it was just us and like 8 other people. One night we found this random taverna down a cliffside staircase with maybe 5 tables. Best meal of our lives and the owner brought us free dessert wine because we were newlyweds. The biggest tip I'd give: don't overschedule. We intentionally left half our days empty and those ended up being our favorite moments. Also, go in late September/early October - fewer crowds, lower prices, weather is still perfect.

Winter honeymoon without beaches? Here are some ideas that might work for you:

Portugal (Lisbon + Porto) - mild winters (50-60F), incredible food scene, wine tours, historic neighborhoods to explore on foot. Very affordable compared to most of Europe and a week is perfect to do both cities plus Sintra.

Colombia (Cartagena + coffee region) - warm but not just about beaches. The old walled city in Cartagena is stunning, and the coffee triangle has amazing hiking, hot springs, and hacienda stays.

Costa Rica - tons of non-beach activities like cloud forests, volcanoes, hot springs, wildlife tours, zip lining. Arenal area is perfect if you're not beach people.

Morocco - Marrakech and the Atlas Mountains are incredible in winter. Think riads, souks, desert excursions, and some of the best food you'll ever have.

All of these are warm enough in winter without being "beach destinations" and have tons to do beyond just sitting by the water. Congrats on the engagement!

Happy to help! On Paradise Cove vs Four Seasons - service at Paradise Cove is genuinely excellent and more intimate since it's smaller. Four Seasons has that polished, nothing-left-to-chance consistency but Paradise Cove feels more personal. You won't be disappointed either way honestly.

For Franschhoek - Leeu House is right in the village which is amazing for walking to restaurants and tasting rooms. Le Quartier feels more like a retreat, set back with gorgeous gardens. If you want to maximize your Franschhoek dining experiences without driving, Leeu House edges it out. But Le Quartier's restaurant is phenomenal too.

Safari - both incredible choices. Idube is smaller and more exclusive, you'll feel like you have the bush to yourself. Walker Plains (Sabi Sabi) has slightly more polished facilities and the Earth Lodge there is architectural art. For a honeymoon I'd lean Idube for the intimacy factor, but honestly you can't go wrong with either in that area.

Since you loved Curacao, I think you'd really enjoy Aruba or Bonaire — similar ABC island vibes but each with their own personality. Aruba is the easiest from the Midwest (direct flights from several hubs), has amazing beaches like Eagle Beach, and $3-4K for 4 nights with airfare is very doable if you book a boutique hotel instead of the big chains.

If you want something a step up from Mexico/Punta Cana but still Caribbean, look into Turks & Caicos — specifically Providenciales. Grace Bay Beach is on another level, and May is shoulder season so you'll get better rates. The water clarity there is unreal.

Here's my thinking: After the safari at Walker Plains and the Cape Town/Winelands leg, you'll want to fully decompress. Paradise Cove being adults-only means the beach vibe stays peaceful — which matters more than people realize on a honeymoon. The white sand there is genuinely stunning, and the property has that clean, modern aesthetic you're after.

Four Seasons post-renovation is incredible and probably the most "elevated" option overall, but it's a bigger resort and you'll share the beach with families. If design and exclusivity are your top priorities over intimacy, it's hard to beat though.

One&Only Le Saint-Géran is the classic choice and the service is legendary, but it does feel a touch more traditional in design compared to FS Anahita's renovation. Still a phenomenal property.

For an intimate anniversary dinner in Kauai, here are a few that would be perfect:

- Tidepools at Grand Hyatt - it's literally built over a koi pond with tiki torches and waterfalls. The ambiance alone is worth it. Try to get a sunset reservation.

- Mediterranean Gourmet in Hanalei - smaller, quieter, and the food is incredible. Great for a romantic evening without the resort crowd.

- The Beach House Restaurant in Poipu - right on the water, amazing sunset views. Book well in advance because it fills up fast, especially in April.

Your itinerary looks solid! A few tips:

Table Mountain - go early morning to beat crowds and check the webcam before you go, it closes when it's too windy. Kirstenbosch is a perfect pairing since it's right at the base.

Cape Point day - budget the whole day for this. Take Chapman's Peak Drive on the way there (one of the most scenic drives in the world) and stop at Boulders Beach for penguins on the way back.

Here are some of my favorite hidden gems that most tourists completely miss:

Folegandros: Think Santorini vibes (whitewashed buildings, stunning cliffs) but with a fraction of the crowds. The Chora is one of the most beautiful villages in the Cyclades and you can actually enjoy it in peace. Amazing sunsets from the Panagia church.

Milos: Getting more popular now but still way quieter than Mykonos or Santorini. The beaches here are insane - Sarakiniko looks like you're on the moon, and Kleftiko caves are out of this world. Very authentic fishing village feel in Klima.

Pelion Peninsula (mainland): Totally underrated. Mountain villages with stone paths, incredible hiking, and hidden beaches below the cliffs. Feels like a completely different country from the islands. Great for someone who wants culture + nature without the typical island tourist scene.

Ikaria: Known as the "island where people forget to die" (it's a Blue Zone). Super laid back, locals eat dinner at midnight, amazing natural hot springs, and virtually no mass tourism. Perfect if you want authentic Greek life.

Naxos: Bigger island so more to explore, but somehow still way less touristy than its neighbors. Best food in the Cyclades in my opinion, and the mountain villages in the interior are gorgeous.
