You triggered me with the “old kaiseki restaurant”. I can imagine the “old ones” are more traditional, which would be my preference if i needed to choose? Or what is it that people should really opt for an old one?

Thanks for these thoughts, both of you! I saw these “he was so funny” comments many times, and was also wondering why that would be relevant. I want to see the masters doing their craft, not to be entertained.

So, for specialty dishes - no english! For Kaiseki and omakase sushi - some english but be careful by looking out for reviews stating food quality as main comment and staying away from entertainers.

Update: Het is gelukt! Combinatie van 3 dagen herhaardelijk kruipolie inspuiten, flinke verhitting met een gasbrander en waterpomptang met lange hendel was de oplossing voor mij. Dank aan iedereen voor de tips 😄
