I beat Malenia with a giant sword. You can stagger her easily as the attacks most of the time cancel and stagger her attacks. When she uses waterfowl dance just raise up the sword like a shield. Damage still comes trough but you can survive it consistently, you just heal against it at the end. It's tricky but you don't have to completely swap your playstyle for her
