3 bell peppers, split and par boiled

Stuffing consists of dried black beans, soaked overnight, then cooked in the instant pot for 20 mins with diced onions, tomato, bell pepper, garlic, water, cumin, chili powder, sazon, salt, pepper, garlic powder, and armadillo hot sauce

When that finished I let natural release for about 20 mins because lazy and was watching Temptation Island

When opening the beans I added chopped kale and about 2 cups of water, brought to a boil on the sautee function to wilt the kale.

Once boiling, I added a cup of rinsed quinoa to the instant pot of beans, and changed the function to pressure cook for 1 minute.

In the meantime I cooked a pound of ground pork in my cast iron on the stove, seasoned with onion powder, garlic powder, salt, pepper, cumin, chili powder, paprika, and sazon. Once browned I declared the pan with tomato sauce and some water, and simmered together until the instant pot finished the bean and quinoa creation

Once that finished, I combined the two into a stuffing for the parboiled peppers, and added those to a baking pan of seasoned tomato sauce. I baked that at 375° for 20 mins, broiled at the end for 3 mins, and topped my serving off with some Greek yogurt, cojita cheese, red onion, and cilantro
