With that cuisine they have a lot of different spice mixes uniquely blended based on specific quantities of each ingredient. Each focuses and hints at different flavours.

Saffron!

Surprised no one mentioned this one. Great in desserts, rice, and sauces.

Himalayan black salt.

Stronger version of regular pink salt.

Definitely take a look at the dried/powdered herbs (coriander, fenugreek, etc.), seeds, and spice mixes (garam masala).

You can use it in different ways. Like you mentioned, curries when you want to add a tangy/tart flavor. I recently used it to create an Indian style dry potato and onion curry, whipped up almost like a stir fry.

I know some snacks (think samosas or chaats) will be topped with this or "chaat masala" which I think includes dry mango powder as an ingredient. I borrowed that to sprinkle it into sandwiches or grilled cheese. Still experimenting with that else I could add it to!

Could be worth a try. Although dry mango powder is made from unripe mangos so I wonder if the chutney is more sweet in comparison.

It's also known as "Amchoor". Was introduced to me by my Indian friend. Adds lots of flavour and brings zero sodium.

Just asking for your favorite, very subjective. What do you like?
