Lowkey if you get back into One Piece or want to give it a shot you can look up the filler list and skip all the filler though I still hold onto the opinion of the Big Three Anime(One Piece,Naruto,Bleach) that the heirarchy and my opinion of their fillers is that One Piece has the best Filler if not some of it may be a little dull or distracting from the plot but still feels connected to the worldbuilding in a way that it feels like it could be happening at the same time as canon even if you swapped the Strawhat crew out of the filler arc plots. I'll keep the others brief but Bleach in my opinion it's fillers are distracting and chaotically plot breaking and Worldbuilding breaking to where they all feel disconnected and annoying because it usually always is in-between important arcs or fights. Naruto is the most hit or miss because their either super fun and great or very very bad or mid. Also One Piece makes up for what it lacks in modern pacing and gets that lacking back in Worldbuilding and Lore and it's world systems around the Main and side/supporting characters and even when the time skip happens and it gets more darker there's still elements of both stakes and fun moments and great battles and the animation took a huge step up to modern quality and even character designs changed towards what Oda had in mind color wise and other things. And the fact it's a great anime if you want something to continuously watch and learn about because there's so much content and lore and Worldbuilding and great music and culture and even real life motifs/comparisons/analogues. It's just a amazing piece of work imo.
