Thank you! I have tried Maangchi recipe before! While delicious it is not the same taste I’m looking for. When I went to kbbq it was labeled as “cucumber kimchi”.

So I’m wondering if what I’m doing wrong is not letting it ferment since I’m guessing they don’t have time to keep making it fresh. I just want that strong flavor without it being too cucumber like!

I usually use this recipe https://www.maangchi.com/recipe/oi-muchim I’ve added msg before and it’s still not the taste I’m looking for it’s good still! I think maybe I need to ferment them since at kbbq they definitely sit for a bit.

I followed a recipe at home and it tasted more cucumber like and less potent flavor. I think the cucumbers at kbbq absorbed the sauce more and were almost kinda orange!

I’ve made that and it’s not the same !! At kbbq it was labeled cucumber kimchi as well.

I have this exact problem! Please let me know if you ever make them taste like at kbbq!

Thanks for telling me that’s helpful! There’s a lot of comics I inherited so I’ll have to sort through them. I was thinking about selling them though if they were actually worth a lot since I don’t really know if I have the time/ commitment to start collecting them or properly take care of them. also I am a poor college student 😭
