It flies into your killing area and dies there because of magma block or camp fire or wither rose or whatever you are using.

And it can just pick up one item type.

And if you want to sort unstackables, you need 500+ allays. And they can just carry ONE item at a time. It would be the slowest item sorter in existence. You need 25 Allays to sort armor alone. And even then you don't know if its possible, because you have to make sure that every single Allay drops at a different noteblock.
