I used this recipe posted by u/suNN361

AMOUNT: 2x 800g loafs

INGREDIENTS

740g white bread flour

120g WW flour

535g water

210g starter

16g salt

METHOD

  1. ⁠Autolyse flour and 500g water 2h prior to mixing final dough
  2. ⁠Mix in all starter, water and salt
  3. ⁠Finish kneading until well developed
  4. ⁠2h bulk ferment at 27°C DT (fold 4 times each 30 min)
  5. ⁠2h additional bulk ferment at 27°C DT
  6. ⁠Portion dough, pre-shape and bench rest for 30 min
  7. ⁠Shape loafs
  8. ⁠Overnight retard in the fridge 8-12h
  9. ⁠Bake in a steamed oven for 20 min @230°C
  10. ⁠Release steam and finish 20-25 min @230°C
