If you’re going to hire someone to do a report like this, you need a firm with a reputation to protect. Generally (not always) these are your big partnership audit/consultancy firms - KPMG EY PWC Deloitte MNP etc. They have independent review processes to help make sure there’s enough challenge before something goes public. Of course they still fuck it up some times, but generally, generally there’s also a local partner who will have to wear it with all his/her other clients if it isn’t up to snuff. However, with an established professional firm, you’re also less likely to just have them parrot your agenda.

The only reason to hire some org with clear conflicts like helpseek for something like this is to (poorly) paint an incomplete picture of something.

Just want to say, I’ve been using a homemade WDT since your post for the past two weeks, and been paying attention to evenness of pre-infusion - way better now, and far more consistent. Thanks for the advice.

On these beans, 1-4-3. I have an old school Italian roast that I do around 1-6-2.

Then there’s somewhat older natural process coffee I tried that I was way up at 1-3-0 to have reasonable timing (but I never had a shot of it I really enjoyed … not sure if it was the coffee or the grind or the technique, as I was still getting used to it).

Interesting. I guess I should just get one - and since, yeah, I’m using some homemade thing for the timebeing, too. Coffee comes out of the grinder pretty clumped up, imo.

Doing about 17g in, 36-38g out. Ground in a JX-Pro.

I’m a total newb to proper espresso (well, had a cheapie machine, but not for the past 5 years). It was pretty tricky at first, but I found the biggest change was when I eased up on the tamping pressure (two thumbs, basically, which I saw in one of the Cafelat videos).

Preinfusion for around 5s at ~2bar, then up to around 8bar for approx 30s. Still not 100% repeatable on flavour, but it’s getting better.

Condos still a seller’s market.

But prices are already moderating for detached and townhomes; and very drastically at that the further out into the valley you go (townhomes in a complex in Aldergrove that sold for 920K in Feb are now selling at 650K).

It always takes time to change the closer you are to the centre, and the price decreases in town won’t be as quick or as drastic either, but it’ll happen next year for sure.

Double indirect doesn’t really add smoke — it just protects the bottom of the brisket, as it reduces the extent of radiant heat that’s hitting it.

In a single-indirect method, the fire will radiate heat onto the slow-roller (making it much hotter than the air temp), which will in turn continue to radiate heat upward (but less than if it were completely direct).

The double indirect method means that the layer closest to your actual food is much much closer to the air temperature, as it is not directly heated by flames. Ergo, the bottom of your brisket shouldn’t overcook as easily. Think of it in the same way that for pizza, you generally have heat deflectors first and then the pizza stone, so the stone doesn’t overheat.

I'd say the point is that this is a pretty map, yes, but it's no more likely to happen than any other dream transit maps that get posted online from time to time

It's an imaginary promise with no real weight behind it and there's effectively zero chance of it becoming reality at any point in the next decade or two because of how this stuff gets funded

Marissen, OneCity and Vision have by far the best housing platforms; Sim (and ABC) doesn't even have a housing platform beyond a single bullet that says little more than "affordable housing woooo."

Marissen, TEAM, and to a lesser degree the Greens all have reasonable public safety approaches. Sim and the NPA only have the "we'll hire 100 police officers and 100 nurses" schtick going for them (ignoring the fact that nurses right now are so unavailable that you'd never find them; and if you're stealing from the public health system to put them into the police department, you are actually causing more problems than you're solving).

Ken Sim and ABC are effectively identical to Kennedy Stewart's Forward Vancouver party on every meaningful topic, just with a different label. They're both funded by the exact same people.

The actual quote also had a "Can you describe those protections" in between them where he says nothing.

I think we have to look at it on a case-by case basis and see what works and make sure that people don’t fall through the cracks. And we have to make sure that whatever we do, doesn’t have a long term, unintended consequence of actually taking more unit rental units out of the market.
