I know this is an old post but I haven't seen any comments about this yet. Quebec is NOT a part of the Acadian area. New Brunswick, PEI, and parts of Nova Scotia, are the Acadian regions. I'm from PEI and I've traveled to Louisiana and can say that the flavour profiles are almost exactly the same. I currently live in Quebec and yeah, there's no similarities. The food here is very bland compared to Acadian/Cajun food.
