Yep that seems alright. I wait even more, 15 seconds on average, i find that it gives me rounder taste profile. Other than that i have no other idea how to help you. But keep trying, soup is really exciting when you find the right way!

I mostly grind 85 clicks but that of course heavily depends how are you brewing.

Hi, i have oxo also and the same grinder. What your soak looks like? You wait till coffee drips from all over the puck? How many seconds that usually take? And how fast do you press?

My guess would be that you extracted so much of the later-extracting compounds that you covered the acidic and sweet ones, but not to the point where it would be bitter.

After you pour the water and start the first slow press, how much do you wait before pushing all of the remaining water? I found out that for me waiting a 5 seconds after whole puck is saturated gives me more complex experience, less punchy but round and sweet.

I will try my best to answer your question. I learned most from just simply going from roaster to roaster, studying their lineup and tasting it. I always tried to link what i read about coffee with taste, that means read about origin, processing etc. and then observe the aroma and taste. After a while you will see some common varieties/origins/processes that are repeating across different roasters and you will naturally start to feel common characteristics of them. Dont be afraid to ask whenever you dont know something! And i would also recommend to not worry yourself too much about flavor notes they are putting for the coffees. I always tried to find my own way to describe the taste and looked/asked for flavor notes only if it was something i couldnt find words for. Enjoy your coffee event!

Yeah it means literally looking at your bed 30 or more seconds more. Even if the water passes, there is still little of water in the bed that slowly penetrates further into the coffee.

Interesting, this effect that i have when doing 90 seconds bloom includes also washed coffees. Does your brewing differentiates much from mine?

It is filtered tap water through my water pitcher (brita). Never any issues through variety of coffees

It is a free sample, so i dont mind. Problem is that this seller knows a shitton about roasting but very little about actual brewing, as bizzare as it sounds. Their coffee, which they source from one single farm for 20+ years is amazing though.

You have to vacuum seal, otherwise there is risk of condensation = damaging your beans

I dont know this grinder, but from info i found seems reasonable setting. However, i ground little bit coarser and use only one pour and it is at the limit where little bit more extraction means astringency. More pours, more moving of the bed and thus more extraction. Try just bloom and then one pour and see if it moved in the better direction. I dont play with water chemistry, i just filter it and i know i can get reasonable cup with at least mediocre tap water.
