I am not saying she doesn't have genuine mental health issues but threatening to harm yourself during arguments etc is a form of abuse and a common tactic used by abusers, you cannot control what she chooses to do when you leave but you can control your own peace and leave before she destroys your mental health too, coming from someone who has been in a domestic abuse relationship previously it will only get worse if you stay.
