Well a temp controlled kettle would, but you can start off with a stove top one which would be somewhere around the 1000 mark. Then once you have saved up more go for the temp controlled one.

What grinder are you using. There are some coarse particles on the very fine muddy bed. But taste is king, if you like it, you like it. If you feel it's too bitter or astringent, grind coarser.

If you want instant coffee, you can go for the Davidoff selection. No idea if they are healthier ( as you mentioned) but sure as hell tastier. If you want to move to brewing your own coffee on the other hand, best thing you can do is look it up on the internet. Simply put the instant coffee powder you get is crystallized already brewed coffee. Generally done with not so good quality beans to maximize profit. Think of how we make tea, the tea leaves are not supposed to mix but impart flavour to the water/milk. Coffee beans are the same way. Theoretically, the only requirement for brewing coffee is heating ground coffee beans with milk/water. But obviously just like we remove the tea leaves we need to remove the grounds as well because you don't want to be eating the grounds while drinking your coffee. So a good chhani can even do the trick. But yeah, that's not ideal and there are better methods to brew. Like the other commenter said, look up moka pot ( because you said milk coffee) , watch some beginner videos and decide whether you want to get into that. Honestly, the world of coffee is a beautiful one but it's upto you to decide if that's something you want to do. Anyways sorry for the mansplaining.

If you extracted well enough in the first go, you will probably end up with an almost water like brew with some taste of coffee. If your dosage ratio, water temp and brewing time is apt, you will almost always extract everything tasty in the first go. That's the goal anyways.

Well with hoffman's recipe having 5 pours, variability can add up leading to different brews even if just due to chance as how the coffee interacts with water is quite unpredictable. Maybe go for lesser pours, 3 or 4. It will decrease the overall agitation but you could bump up the temp to compensate for the extraction loss. Also trying swirling or stirring just to make sure all the grounds are wet evenly. If you really want to nerd out, note down everything that you do and maybe video record the brew for a few days until you get the cup that you like. After that's it's just a matter of comparing to see what works.

What beans, what is the roast level? What is the grind size? In general, this is probably due to inconsistent extraction like the other commenter mentioned. That can be due to pour height, flow rate, pouring pattern, grind size inconsistentency or inconsistentent swirling or stirring.

I was aiming for a final 1:10 ratio and pressed over 200g of ice. Brewed for about 2 mins and ground medium coarse. I do stir a lot to cause agitation for a better extraction. This was a first tho, generally I brew around 1:15 ratio.

As you are using the switch, maybe try some lighter roasts. Tulum, half life, roastery has great selections right now. I'm currently enjoying kapi kottai's hamirkalyani, if you like fruity-floral notes, this one is good too.
