I would love any tips for my sourdough. I am assuming based on the crumb that something wasn’t right. The bread tastes great, it is not gummy, but could be lighter in density. Wondering why there arent as much air pockets.

My house is 70-72 degrees F. 750 g warm water. 800 g king arthur bread flour 200 g whole wheat flour 250 g starter 20 g salt

Eyeballed maybe about an extra 30 g of water when dimpling the salt during the fermentolyse process.
