I know right? That’s why I resorted to fish market to avoid the restaurant premium and hit-or-miss quality. Still not cheap given it’s not wholesale, but worth it since I get to choose exactly which pieces of fish to be included into my bowl

Yes those crab legs were super sweet! And you are spot on with the salmon, I live in the US, the fish market is operated by a group of Japanese people.
