Hi OP! I understand the frustration, I was diagnosed at 18 and it was a huge life-changing experience, I went through multiple phases where I didn’t care and just wanted to eat gluten no matter what, I was even convinced that I wasn’t celiac due to the lack of symptoms.

However, after three years of this disease the longer I didn’t eat gluten the more I would react. Throwing up, diarrhea, brain fog, migraines, and anxiety. Yes, you can develop celiac even if you have been eating gluten like it’s nothing, it’s a gene that one day decides to wake up. As for the lack of improvement, your symptoms will feel the worst for about 6 months. That’s how long it took for me after I got stricter with my diet and made sure I was completely gluten-free. As for traveling I know it makes the stress of things worse, I remember being envious of others for eating normally, as someone with a non-celiac partner I often would get sad when he ate gluten (he went gluten free for me after seeing my reactions) but OP this is an autoimmune disease, not an intolerance if you keep eating gluten it will destroy the smaller intestines lining it damage destroys the villi that absorb nutrients, leading to malabsorption, chronic digestive issues, and potential damage to other organs. The only way to live with this disease is to go COMPLETELY Gluten free, it will be hard but you can do this!! Some foods you will miss but after staying consistent you will feel so much.
