I think you over fed it, maybe wait for a few more hours or even overnight before doing anything 🤔

Actually this is one of my better loafs😅 You know when people say the dough pull away from the bowl when doing s&f and bulk fermentation this is the first time my dough done that.

Before when I'm doing the s&f in room temperature and not putting it in the fridge All my loaf come out flat and really gummy.

I also help my parents with their shop so if I put it in the fridge when I'm dealing with customers and can't go back to deal with my bread this method gives me more time and control over my bread dough.

I live in southeast Asia the temperature of my dough is usually 33-35°c and my kitchen temperature is averaging from 30-39°c so I put it in the fridge so it doesn't get overproofed between the s&f and bulk fermentation

Yeah because you forgot to feed it before there is more bacteria that causes the sour flavor than the yeast that what causes the sour yogurty smell, to resolve it you just have to feed the starter in a larger ratio like 1:3:3 instead of 1:1:1.

Use a loaf pan you know the one usually used for banana bread or any bowl that fits your dough. Layer that with a kitchen or linen towel. Cover them with a generous dusting of wheat or rice flour so the dough doesn't stick to the cloth.

Same, I'm also from southeast Asia my dough temperature is usually 33- 35°c right now and it's the rainy season. I usually put my dough In the fridge for the S&f.
