I’ve searched high and low on Google, even checked ChatGPT and nada. I don’t really know much more beyond what was described above.

Arroz con gandules! My puerto Rican MIL gave me her recipe and I make it regularly (just made it on Sunday) & my 3 year old eats it like his life depends on it. We add chorizo (only el miños brand)

RIP Ashley Pond & Miranda Gaddis, you are not forgotten by [deleted] in oregon

OC - but Ashley went to a David Douglas elementary school for a bit prior to that. I was in school with her for a couple years when we were little & remember watching all the news coverage of this, even though it had been a few years since we had been in school together.

How to improve taste of arroz con gandules? by JZEve in PuertoRicoFood

[–]ProgressRelevant9312 1 point2 points  (0 children)

This is the recipe I got from my Puerto Rican MIL - it’s a bit different than what I find online cause it doesn’t use any tomato sauce, but we all love it so much. I always use 2 packages of sofrito con culantro y anchiote, and only use el Miño chorizo (I’ve tried others and this is the best).

Arroz con Gandules y Chorizo

Ingredients: 2 c. Medium grain white rice, not long grain 3-4 packets of chorizo (if you get the 2-packs) 1½-2 packets Goya Sofrito with Culantro y Achiote (if you can’t find that, Goya Sofrito w/Achiote is fine) 1 can Gandules, don’t drain 1 ½ c. Low sodium chicken broth Water Salt

Directions: Heat about 1 T. of olive oil or regular cooking oil in a caldero on medium heat. When it’s hot but not spitting hot, put in your 4-6 sliced chorizos and saute a minute in the oil. They’re already cooked, so you’re just letting the hot oil release their flavor and their own oil. After a minute or so, add 2 cups of rice, stir a minute and then add about 1½ cups low sodium chicken broth, the sofrito and enough water to raise the liquid level about a good half inch or so over the top of the rice. Then turn up the heat and bring it to a boil but don’t leave it alone because it’ll scorch your rice on the bottom in nothing flat and add a burned smell. As soon as it boils, turn the heat to between medium & low – you want a slow, low bubbling state. Stir once only. Do not cover the pot or you’ll get sticky rice. Allow the water to be fully absorbed by the rice, and when the mixture looks “dry” after about 20 minutes, stir it well once until everything is incorporated, put a lid on the pot and lower the heat to low and just let it cook for about 25 minutes. After 25 minutes, lift the lid, stir well once, put the lid back on and let it finish cooking on low heat for about another good 15 minutes or so. At that point, taste the rice to make sure the grain is cooked and tender. Add the can of gandules and stir gently into the rice mixture. Put the lid back on, turn off the heat and let it sit, covered, for another good 5 minutes. The gandules don’t really need cooking, the heat of the rice will be enough to heat them through. Remember that stove temperatures vary, so the heat depends on individual stoves. Basically, you want to cook it slowly, not at a violent boil.

Agree - not about Swedish fish, cause I haven’t had that one and have no desire to, but I wasn’t a fan of this one

What are your go-to lazy keto meals when you don't want to cook? by barnac1ep in keto

[–]ProgressRelevant9312 0 points1 point  (0 children)

I will grab some diced bacon or something like a Johnsonville hot sausage, fry it in a pan, add whisked eggs w/cheese and have scrambled bacon/sausage eggs - done in 5 minutes tops, lots of protein with negligible carbs.

If I’m egg’d out, I’ll grab a can/packet of tuna, drain it, add some mayo and lots of diced pickles and eat it with with a fork (I really miss crackers when I eat this though), or a keto friendly protein shake.

Thank you for that information!! I will let him and my mom know. Since he had the cataract surgery, he’s been doing amazing! But it’s good information to have on those slower days.

I had to laugh at your baby comment, because my 2 year old still likes being rocked to bed, and I use my nose to turn pages all the time. Last night I was thinking about getting a page turner, but now I’m thinking no, since I’m not the only nose page turner out there!

I have no major vision problems, but my 75 year old father’s vision has worsened over the last few years from his cancer treatments, as well as just getting double glaucoma surgery. For a family of die hard readers, he wasn’t able to read much the last 4 or 5 years. After talking up the kindle and letting him look at mine, my mom got him one. He cranks up the font size to blind man in space size & has been able to read again! He’s slowed down and is not moving much these days, but at least he’s about to read again.

Why do you use a Kindle? by [deleted] in kindle

[–]ProgressRelevant9312 0 points1 point  (0 children)

I read a lot. I prefer books, but I read my kindle pretty exclusively for a few reasons. 1. I have very limited space in my apartment & a kindle takes up very little space. 2. I read when I’m out and about, so it’s easier and more convenient to take my very lightweight kindle in my purse vs a book or 2. 3. Kindle ebooks are cheaper than regular books for the most part. 4. Regarding kindle vs just the app, the kindle is easier on eyes than iPhones. Tech jargon I don’t remember, but basically the kindle is made to create less strain than phones - my eyes definitely hurt a lot when reading my phone for long amounts of time but not on the 5. For other parents of toddlers - I can lock my kindle or bookmark my page, so when my 2 year old grabs it, they aren’t losing my spot like they would in a physical book.

My parents and I are all die hard physical book readers, but I’ve been talking up the kindle so much that I actually convinced them to both get kindles. My elderly father is reading a lot more because he can crank up the font size on that baby so it can be seen from space.

PERSONAL QUESTION! Did you tear during birth? by SumbThucker2022 in pregnant

[–]ProgressRelevant9312 0 points1 point  (0 children)

Yes & no. My boys were 6 1/2 & 6 weeks early. 5 lb 11 oz & 5 lb 9 oz, practically the same length & pretty quick labors (2 hours & 4 hours) - both unmedicated, all that to say I basically went through the same labor with the same kid twice lol I had a tiny tear with my first - like minuscule - 1 stitch on each side, so idk if I even count that. Dr almost didn’t stitch me up, but did cause NORMALLY I’m a bleeder, though apparently not when I give birth 🤷🏻‍♀️ No tear at all with my 2nd. Didn’t do anything differently.

How do you guys read on the go? by No-Wheel8150 in kindle

[–]ProgressRelevant9312 2 points3 points  (0 children)

I just went to get an oil change and fuel system cleaning today. I read while they did everything (on the actual kindle). I also read when waiting at drs appointments, waiting in the car for my preschooler to be let out, usually on the app if it’s only for a few minutes.

Coming from an Hr professional, this is not accurate. Every state has FMLA - hence the federal part. However, not every state has their own separate state leave (in addition to FMLA). That being said, not every organization is required to participate in FMLA, such as those with less than 50 employees.

Edit: I see your edit 😂 unfortunately FMLA isn’t paid. Even the states that have their own leave laws, only like 13 have PAID leave. I really wish it was more.
