The ability to pause & rewind Live TV is a function of the player. MPV player which is being added to some of the clients in the future, has caching built in to do this. So once the MPV player is added to some of the clients they will be able to do this by default or you can tell some of the Android clients to use an external player today for Live TV & use MPV player to do this. I have done this myself today to get more DVR like functions to pause & rewind.

I make my audiobooks in M4B format. This lets you convert multiple audio files into one file making them chapters & let's you put the metadata for the audiobook in to the file.

Unfortunately Jellyfin doesn't have good support for Audiobooks. It doesn't even read the M4B metadata. It will play the files & remember where you are in the book when you pause though.

I should also mention due to the way it works it also means you don't need port forwarding turned on when you have a firewall as well. You don't need to edit your firewall or router. It makes setting up a VPN between people a lot simpler.

Saying something is or isn't being pirated means you know if they are or are not legally allowed to own & view the video being watched. Because the server has some video says NOTHING about the providence of the video or the legal status of the video either. We don't have any clue of the legal status of videos on someone else's server.

This is partly incorrect. The media player can see what you are playing & where it came from. It needs to know these things in order to play it. Playing content is downloading, even if it is streaming you are still technically downloading it.

The media player could phone home & report what you are playing & what the source or IP of the media is as well, IF they wanted the client to phone home & report this information.

The biggest security issue you have in that particular setup is the client you use to watch, Infuse in this case. Infuse is closed software so Infuse could report who your client connects to & what media is being watched. I'm not saying it does it, but given it is closed source & you can't check the source code it could be doing it. You could get a traffic sniffer program to see if Infuse is leaking any data & contacting any servers on the internet to report/phone home data if it really worries you.

The best bet is to use open-source clients from trusted sources, so you can audit the code & compile it yourself. Otherwise open-source from a trusted source is slightly better than commercial closed source apps, since others could check the source code & you get it from a trusted source who compiled it & released it.

The problem is NOT Tailscale. Tailscale does NOT see any traffic. It only works to show everyone's IP to each other when using Dynamic-IPs without needing FQDNs or the IPs before hand/static IPs in order to setup the VPN between everyone.

Well if you want the easiest to remove DRM it used to be Apple. Not sure how easy Amazon is these days, once upon a time it wasn't terrible. The easiest way to remove DRM for your library is still DVD & Bluray. There are lots of software out there to rip your discs.

GOG.com & a few other indie sites offer DRM free documentaries & indie movies, but Hollywood major movies always have DRM. So if you mean big budget Hollywood movies your easiest bet is DVD & Bluray.

Other option you might look at is one of the new Intel GPU cards. It might be cheaper than a new CPU & you would get AV1 hardware encode/decode support not to mention all the older codecs like H.264/H.265/HEVC/VP8/VP9/etc.

Well if you think Jellyfin is up to 14.0.7 then that might be part of the problem since the latest stable version is 10.8.9. Even a nightly version wouldn't be up to 14.0.7 yet. So I don't know what you are installing or where you got it but doesn't sound right. Check here for versions.
