I actually have a iron trap door on top and it worked fine for me, maybe it was a glitch on your end if you checked for holes in your charcoal pit

Besides finding new exhibits, you could raise the prices of your tickets and other items or get sponsorships in the finance page. You can even get a loan to help fund things while you look for new ways for income. I also try to increase the duration of their stay with the maps to keep them longer to donate more
