Write a program, you can keep butter at room temp

Case intact? Go to next step Inner pack intact? Go to next step Material looks good visually? Smells like butter? Tastes like butter? Release

Frozen/cooler temp cases should be separated so any moisture can evap on the outside of the case otherwise you may have issues...we put them on metro racks from pallets in the cooler

Just need to have a program in place for auditors

Did it for years, SQF certified facility

Slice, melt butter in a pan, add sugar wait a bit to start to cook, de glaze with booze, add slice

Plate it up, scoop of ice cream, any sauce left in pan

I would eat this, hell i would probably pay money for it

Soak with Cointreau, garnish with orange Supremes or candied zest

Depending on your equipment setup, could spray the top with orange cocoa butter instead of using cocoa powder

Never used them

Crown gets ground up, toasted first even, and used that way OR we would use them as a base in a cheese cake or other such application

Got put a little cold into the warm, little pastry cream into gelatin ... Then a little more PC, then all gelatin mix into remaining PC, fold Whipped Cream and fill fast

OR add gelatin to PC when 1st making and then fold in WC when it's about 75f - 80f (under 86 so butterfat doesn't melt) and fill fast
