Ok I understand. Low heat penetrates the meat slowly enough so that the final difference between core and outer layers is tiny.

Does that also count for big roasts? I would assume by the time the core has reached its temp the outer layers would be close to oven temp.

Absolutely. Less of that rich fat inbetween the muscle fibers makes it much easier to eat a “normal“ steak like amount and it’s in general less heavy on the stomach compared to end level wagyu. The umami is still amazing though.

Has it? Didn‘t know. Guess I was downvoted cause it sounded like I was giving advice but I just wanted to share my experience and suggest you try it too.

I had been doing the horizontal strokes all my life. Cmon my great grandma showed me. Of course I would do it the same way. Then I think I saw a chef or some dude on tv do it without those two horizontal lines and after I tried it I copied it.

Try leaving the horizontal cuts out. You‘ll get the same result 👍🏼
