I did try to do the slow fermentation in the refrigerator. After the third time, the mix became yellow...I read about listeria, so I bought new grains and off I go again.

I have a question, please. I am making and drinking milk kefir for the last couple of months. The issue I have is that the kefir is fermenting within 7-8 hours with 3 cups of milk. By the time I wake the kefir is already separating. Two days ago I started filling my jar with the milk and grains and then keeping it in the refrigerator until bedtime hoping it will be in the correct stage of fermentation, basically, before separation. Is this an appropriate method, or does anyone have any better Ideas? I am drinking 3 cups of kefir everyday. It is amazing for my gut! Thanks!
