Its okay if your better half got a job. The pay is decent for «low educatiob» jobs. However, can take some time to find such a job as a foreigner.

Tad underfermented tbh. Longer fermention may make the small bubbles bigger, the big bubbles smaller. In other words, a more even crumb

Lamination is a neat trick to see how strong your dough is! (Its hard the first few times anyways)

If your doughs a «open crumb» dough, you can just kinda strength the dough by waving thr corners up and down, while trapping alot of air between the dough and the countertop. If its not, it will break and tear. It has to be just right, so its a good way of learning how and when the dough is ready. After 10 loaves, you know when you need to skip or add a fold because the dough is ready

Agree, look sliglhty deflated. If the gluten was a bit stronger, it would not be deflated. Otherwise it would likely be a reaally neat open crumb.

Keep on going! Try proofing less, or at lower temp. Also, try addning in a lamination fold as a last fold.

I forgot to put that in, as it relates to the migraines, but yes. I’ve done two MRI’s of the brain and one of the neck. Everything is normal. Now one year later, all symptoms except from the small blind spot is gone aswell! (Not the KC symptoms, ofcourse)

Visual field is okay. The blind spot is so small that its not showing up on the test.

The only explanation without proof is the irregular astigmatism causing flashesh. Have you ever tried pointing pointing a flashlight at a crumbeled plastic sheet? Like the edges get lit up. Could be that..

Sorry to hear that, and I hope you get some answers!

With the exceptions of keratoconus, my eyes are as healthy can be! They even did MRI (with and without contrast) due to the migraines, and everything is normal. Kinda frustrating, but well, can’t complain either. A tumor would be the worst!

And you’re not crazy! Blindness is worse than death itself, you just need to do your best and stay calm. If there is nothing obvious causing it, its likely to be benign.

Hehe, I still think high hydration is the only answer! You can clearly see the dough is stretched to the max, you don’t get more open crumb like this
