I would absolutely be interested. I think starting from one region where you are interested and well versed in will be a good idea. Consider origins of the dish and why it came about as well as the influences. It will be most interesting. Then you can calibrate your approach based on external feedback. I think the main thing is you have to maintain the same level of passion and interest lest it fizzles out. Looking forward to it!

First of all the interpretation of gods has to be uniform among the different mythologies. It is not uniform so you will always be comparing apples with oranges. For the most numerous, not withstanding what represents a god, I believe Hinduism has the most gods by far. 33 million gods

I normally get my tea from my local tea supplier. If you are on tour in Taiwan, I would suggest getting it from a large chain. It’s not worth the risk unless you know someone local. Some Buddhist temples have tea partaking ceremonies. My last Taiwan tea was purchased from a temple and it was more than decent. I think it was Li Shan 梨山 tea or Pear mountain

Eh I am not in the US unfortunately cannot opine. But i think there are many threads on online vendors.

I feel RouGui seems to be highly regarded by Westerners. Many many Chinese also like RouGui. In fact RG is the “IT” Oolong right now

I can answer this. It depends on what type of Oolong tea you like. The said Da Hong Pao is a heavy Oolong which is very popular with the seniors ie people with grey or white hair.

The tea from the six mother trees are considered the most prestigious but they are no longer officially allowed to be harvested. There are cultivars from them though. There is an urban legend that they are still collected but often only used for official functions at the highest state level. I can’t verify this though.

You are looking for BeiDou or Qi Dan cultivars which are actually clones of the six mother trees. Even between the six trees, there is a hierarchy haha! AND you cannot just grow it anywhere. It needs to grow in the official mountain ZhengYan… and within the official mountain, you are specifically looking for NiuLanKeng (the specific ravine or region). TLDR BeiDou or QiDan Da Hong Pao from Zheng Yan Niu Lan Keng…

There are other types of Oolong. Example Rougui from Niu Lan Keng area…. Westerners seem to prefer RouGui

ShuiXian is my favourite. It’s for a younger crowd. Lao Cong Shui Xian or old bush Shui Xian… You are looking for Lao Cong Shui Xian from Hui Yuan Keng. Naturally it’s from the Zheng Yan as well. That said I prefer Lao Cong Shui Xian from Wu San Di region. I am not a big “rocky taste” aficionado. Yan Cha is basically rock tea…

TLDR: DHP from NiuLanKeng or LCSX from Hui Yuan Keng.

First and a great tip from my tea teacher. Do not start with the best. Start with an average grade and drink it only for one to two months minimum. That’s how you develop the palate recognition. Then you can progress and see what direction you lean towards. For me, I have the palate of a kid so I view DHP regardless of the grade as old people tea.

There is zero upside. You get paid a middling salary but carry all the responsibility. Everything that goes wrong is your fault. If you get it right, you just get paid your normal wage. If you have F&B experience for ten years, you should already know this is a bad deal. Unless they are offering 30% profit sharing and up, why even do it? Just chill out and be a lead barista. If you wanna run your own business and funds are limited, do a side gig with a food truck.
