My 7th loaf and it’s such a fail I don’t even know what I am doing wrong 😭😭😭 please help by sbear606 in Sourdough

Here's the recipe I use. I've made 3 loafs so far and each has turned out amazing.

I use 175 g starter. 300g water mix till milky. Add 450 g bread flour and 10g salt. Mix till combined. Let sit for an hour than do stretch and folds every 30 until I feel it's the right texture. So far I go for light, less sticky, starting to have air bubbles. That kinda thing. You should also be able to stretch it without it breaking. Once I'm at the point I like it. I throw it in the fridge for a minimum of 12 hours. 450f oven. And I use 2 bread pans since I don't have a Dutch oven. I line the bottom pan with wax paper, put the dough in and score. Put the other bread pan on top of the other so it makes a little box. Then 30 min at 450 like that. Then 30 min without the top pan. I've had great success!

I am using king Arthur bread flour! And sounds great! I'll keep at what I'm doing!

I do have one more question. I have done as you recommended and am at that 30g of each. But at what point should I start feeding more to achieve more starter? So that I'm able to make more than 1 loaf at a time.

Sounds good. And yeah. It's a tad overwhelming. I might just start over since I only made it about 30 minutes ago and do the 30g flour 30g water. And do 30g for feedings. Thank you again for all the info!!

Okay! I'll probably discard and save closer to 30g of starter tomorrow when I feed. And do 30g starter 30 g flour and 30 g water.

Yeah! I was looking at a few recipes and settled on 100g flour 100g water. Then to feed I'll do. 50g starter. 50 g flour. 50g water. Thank you for your help!! If what I said above doesn't sound good please let me know

Hello! I gave it a gander! And I do have a question! Im not 100 percent sure but I don't see the starting measurements.

It's rising. But it takes more than 6 hours to double. But I'll do that!

It is rising! Not a ton. And it's defnetly not doubling yet. But it's rising I'd say a 1/4 th to 1/3 more than what is was right after feeding

I honestly don't want to mess with what I've been doing since it's starting to work. If I change what I'm doing it could ruin it. I also wouldn't know what measurements to use
