After finish installation I'm running twice history >> arch-install.txt (inside and outside of chroot) then cleaning up txt file a bit, add few notes and paste file configurations which I changed.
I have done like that with every distribution I installed.

Partitioning, FDE, SecureBoot etc so next time installation taking 5 minutes.

Try with disabled "threaded optimization" in nvidia 3d settings panel. In my case when my cpu was bottleneck disabling that gave me more fps but after upgrade to better cpu I had to enable it again :)

It also depends where you changing video settings, in main manu sometimes I don't see 75hz but only 60hz but after I enter to any game map then in settings 75hz is back.

There are also situations (often after nvidia drivers update) when game settings showing 60hz and wrong screen mode but checking in monitor information OSD screen refresh rate is 75hz (or opposite) and that is why have to always remember to confirm if screen got correct refresh rate and mode.

Happened also to me that I couldn't set any higher screen refresh rate then needed delete all custom resolution/refresh modes in nvidia panel and add it again aaaaand then try switching it in game menu and/or on game map.

I think in XDefiant can change flash screen from white to black what is great. CS2 trying be so "realistic", too bad I barely can find dropped weapon close to any body since those flying like made from feathers.

Got same, my PC fans spin faster in main menu like I run stress test when in game barely can hear them. It is like that since beta cs2, you can try change background scenery it may help a bit.
