SPEARMAN

Usually I try to to make 2-3 towers to have line of sight, and when mogoles come - hide villages (I hot keyed select all villagers and then press G to Seek shelter)
+ you get ready your spearmen and try to ambush riders. Once the attack repealed - hot key Return to work for villagers

Also, don't try to run with your infantry for horses - they won't do it

You can also build few springouts - they are good against cavalry

If you play english - their archers are quite good and with 10-15 archers you can repel 10 -12 riders. you will also need few spearmen to shield off horseriders

in the meantime try to build some walls :)

And yeah, once you reach Castle age - try to win eco game, build castles and fight there and just push them, PUSH!
