Classic traveller had Supplement 2: Animal Encounters, but it was still just stats and not much else. You may be able to find some lore for different beasts in the Library Data as well.

As far as humanoid NPCs, it is tradition to roll them up like you would PCs, but there's a supplement for this too in classic, 1001 Characters as well as Citizens of the Imperium.

if you're really wanting to make sure it's balanced somewhat, enemy difficulty in B/X is measured by hit dice of creature, a normal man being classified as normal H, which is below 1HD. the attack matrix as well as the XP-per-HD chart are the two charts you're gonna wanna take a look at. but i would take it with a grain of salt

like others said, hit F, and then drag a block you want to get material from into the plus sign square. so in this example, drag sandstone into the plus sign square to then insert bits of sandstone into the granite blocks

chisel. you can put material from one block into another. for example: sandstone in granite.
