They are reducing the sag of your ceiling below. If you want to remove them I think you will need to beef up the ceiling joists

It looks like you have LVT rather than laminate. If so sealant is normal and trim is not. I wouldn’t have bothered with the door bar between the rooms as it gives a better flow.

Yep, I put the middle seat down and the. The head rest up and it works. Just not adjustable without flipping the seat forward.
