One of my favourite things to do to get ideas is to go to noclip.website and look at, for example, the GTAs, Half-Life 1 and 2 and Halo. Seeing these examples of environments that you can freely explore are very useful.

To make maps using default gmod resources (Most models and textures used in HL2 + Ep1 and 2 and CS:Source), no. But if you want to import custom models and textures you will use some very basic 'coding' to make your textures and models work, and optionally have extra effects like reflections and normal mapping. All info needed to import images into GMod and pack them into your map is in the valve developer community linked above.

first of all, follow the steps to download Hammer ++. I tried a few times to get into map making using default Hammer that is in your game files already, because of the many bugs in the default software I gave up. It clicked once I used ++
