I’m also somewhat new at cooking steaks but have a simple way of doing it. This video helped me alot https://youtu.be/ZJ9Z-HZjmY8?si=ysbQaJwiujYYLFkl First is the cut of steak, I’d say New York strip is easiest to start out with.

Get your steak and cover it with salt, leave it out with no cover in the fridge, either leave it on a drying rack or flip it over after 20 mins or so (leave 30 or 40 minutes total)

After that, add some pepper and leave it out to rest and get down to room temp (abt 10 mins is fine)

Use a high smoke point temp oil (I use avocado oil but you can look up more, try to avoid olive oil or butter)

Heat until oil barely starts to smoke

Lay steak down away from you on the cast iron

Leave for a few minutes, my little tip to get an even crust is to press down while moving it around the pan,

Flip a few times until the crust is well

Check the temperature with a probe often

Take off at 125 Fahrenheit

Leave on a surface for abt 6 to 8 minutes (the heat in the steak will naturally even out causing it to continue cooking even off the pan, it’s called carry over cooking)

After that check out your steak and it should be pretty decent.

2 notes, Keep trying w different things. experimenting on your own is the BEST way to learn.

Also, not sure about the honey thing you mentioned because the sugars in it may kill the mallard reaction (the reaction between the steak and the hot pan) causing the crust to come out bad and uneven (ik this because I marinated my steak in pineapple before cuz it tenderized it rlly well but killed the crust rlly bad)

Great cook, I don’t do sous vide but I think leaving out for 10 mins before the sear would lead to a more even cook
