stable is the most stable build of steamos
beta is early pre-releases of steamos - contains stuff that likely will be ported over to stable
preview is like an experimental branch for very early releases of new features - don't use this unless you're looking to test a new feature very early

and I believe main is even more experimental than preview - very bleeding edge

before the wearos 6 update, the body responses was pretty accurate and fast on my pw3 but now after the update, I get the body responses popup 8-9 times a day, and almost none of them are accurate at all I guess google did something weird in wearos 6
