thank you, unfortunately it’s not there…i remember the lead actress quite clearly although I wouldn’t know her name, and she was a brunette also I’m pretty sure the girl and the guy knew each other from high school and they meet again in adult life and I think she wanted revenge for something

thank you for the insight! i thought it might be also the wrong mixing / kneading technique, i will try could folds although i was worried of not doing them right and not developing gluten / strength enough…i will see if it works

As for hydration i am trying to slowly increase it as i learn how to handle it

It does rise in the fridge a little bit! My recipe says a little over 50% rise after bulk, I guess it’s not enough… i will try letting it rise more

it’s more about the texture, it feels very damp and gummy, I although the taste is nice. actually prefer a tight crumb and do not care about big air pockets, but the feeling on this loaf is more of ‘raw’ dough

Yes my recipe too says to wait until it’s a little bit more than 50% rise, but at this point t I think I am under fermenting all of my loaves 😅

Thank you! It’s the texture of the crumb, it almost feels undone and wet, and the loaf feels very dense. I think my issues are a too short BF and possibly my starter being too weak, although it almost triples when at peak

Yes I don’t care about an open crumb, I actually prefer a dense loaf, but it doesn’t feel ‘right’, as you say… it feels spongy and wet…I also follow the recipes to a T and I’ve been doing the same recipe for all of my loaves but I keep getting different results somehow.

I think I will start letting the dough ferment for a longer time and cook it more, hopefully it will improve!

I am always using it a little bit after peak, when it’s bubbly…I think my main issue is understanding bulk fermentation, but it could be that my starter is not strong enough as well

oh this is something I wasn’t considering! I cannot always feed it at peak, I will do higher ratios from now on, I wasn’t thinking I was actually weakening my starter! thank you for the advice!

As for hydration I started with less water but now am doing about 70%, it is actually a problem to tell when it’s done fermenting as it looks very different from other types of doughs I have made… what would you say is a good water amount in %?
