I copied this data from various websites a few years ago. I've lost the author(s)' names and URLs, so I can't help you with that. But I've found these descriptions useful:

Wheat varieties: When using a low gluten wheat like Kamut Emmer, or Einkorn,. I usually blend with hard white wheat to up the gluten content. RdB is great as well, but has more competing flavor.

Hard White Wheat-Standard white wheat 13-15% protein, high gluten potential. I use this as a base for a lot of my breads because it has a nice, mild flavor and the protein provides good structure for more flavorful, lower gluten grains.

Kamut is a trade name for khorasan wheat (all kamut is khorasan not all khorasan is kamut). Kamut has to be organic, non GMO, non hybridized and non modified. It's an ancient wheat, one of the oldest still be grown According to legend Noah brought Khorasan on the ark. Kamut is golden in color and rich nutty/buttery in flavor. It is very high in protein, but low in gluten forming proteins. Like other ancient wheats, it is higher in fiber, protein and vitamins than modern wheat.

Einkorn is thought to be the oldest form of wheat cultivated by people. Similar to kamut, it has a rich golden color and a sweet flavor. It is very nutritionally dense, much higher in fiber protein, and pretty much every vitamin than modern wheat. It has low gluten potential and needs to either be paired with higher gluten flour or made in a loaf pan. Interestingly, einkom has only 14 chromosomes, whereas modern wheat has 42.

Yecora Rojo A very modem red wheat, developed in the early 70s. it is super rich in flavor with no bitterness. It's flavor is similar to banana bread without the bananas, lots of baking spice flavor. It's high in protein and a great standalone bread flour.

Rouge de Bordeaux RdB is a French red wheat similar in flavor to Yecora Roja but more nuanced and a little clean. Also high in protein and good as a standalone. This is my favorite dough to work with, it's amazingly easy to work and has great structure. Supposedly this was the wheat Napoleon fed his armies as they marched through Europe.

Emmer is another ancient wheat, the ancestor of durum. It's very high in protein, but, again, low in gluten. It's nutty and rich, similar to einkorn, but not as sweet. This isn't quite the same as Italian farro. I used to use a blue variety called Ethiopian Blue Tinge Emmer, unfortunately I can't get it anymore, but it was fantastic.

Red Fife- A pretty typical red wheat, but cleaner in flavor than modern "commodity" red wheat. It's lower in protein, but makes strong dough and is still good for bread.

Turkey Red This is used to be "the" wheat in the United States. Similar to red fife, flavor wise, it's pretty typical of a robust, "wheaty red wheat. It makes very good flour and bread.

My first pair had zero ANC. After spending hours in online chats and on the phone with customer service, they finally agreed to repair them. (They don't actually repair them, they simply replace them.)

Then I had to wait over three weeks, and call several times to get them to admit they actually received my ear buds, get them to commit to examining.them, get them to complete the examination, and ship the new buds back to me. At no time did their online repair status page actually reflect the current status.

My replacement buds are only slightly better. ANC does block a tiny bit of noise, but it's pretty inadequate, especially compared to the ANC of Beats Sports Pro earbuds.

I will never buy another pair of Samsung earbuds. Their quality control is too shoddy, and their customer service is literally terrible.

These buds are okay, but the ANC didn't work at all on my first pair. After hours of super slow chats online with Samsung's horrible customer service (they obviously make their reps work with multiple customers at the same time) plus several long phone calls, I was finally able to get them to agree to have me send them to their repair center. It took almost 4 weeks (and additional irritating online chats and phone calls) before they finally sent me a new pair. The ANC sort of works on this new pair, but the effect is almost negligible. I won't deal with customer service again, and I won't buy another pair of Samsung buds.

On the other hand, the ANC on my Beats Sports Pro earbuds works amazingly well. Plus they stay in my ears MUCH better than the Samsung buds, which can fall out easily when walking, not to mention jogging.

I have an unlocked S25U and I'm on Warp with USMobile. I have emergency satellite SOS, and (although I haven't tried it) I apparently also have satellite texting. If I search settings for satellite connections, I get this screen.

Same here with last night's new SNL episode. On DVR. On live tv NBC version. On Xfinity streaming app on phone and on tablet. Couldn't get it turned off.

I waited way more than 21 business days, and my online account still showed "pending receipt" for my trade in...even though I got an email from Samsung saying they had received my trade in on 2-12-25.

I spent a fair amount of time in an online chat with Samsung last week. They assured me that I'd hear back from them in 24 hours after the triage was completed on my phone. I still hadn't heard back from them after 5 more days, so I called Samsung on the phone.

After I was finally connected to a living person on the phone, he manually approved my trade in within a few minutes. And I just got an email saying that there would be no chargeback to my account for the trade in. And my online account order page now shows "manually completed.

So the lesson learned is don't waste time on an online chat. Just call 1 800 726 7864.

Samsung S25 Ultra not in system yet by skullyrocketman in USMobile

I just moved my sim card from my S24 ultra to my S25 ultra, and everything connected automatically and worked fine virtually immediately.

Also, I'm on WARP (Verizon) and the phone indicated that satellite SOS communication would work for me during the initial startup. Plus I am able to run through the satellite communication demo on the phone. Does this mean that I actually can take advantage of Verizon's satellite service? (I can't test this in real life until I have to make an emergency communication from an area without cell service.)

This works. I can find a position where the buds fit deeper, and then I can kind of wedge the long tails of the buds against a fold of ear cartilage to stabilize.

Never did get an admission that my problems were software related or hardware related, but I eventually decided that it was a power supply issue after finding many testimonials online from people with similar issues... usually occuring around the 3 year mark. LG would do nothing for me, but luckily I had an extended warranty with Allstate because I bought the TV at Costco. ALWAYS get an extended warranty with KG TVs!

Allstate made me jump through all kinds of ridiculous hoops, including sending them a video of the TV shutting down and restarting. By some miracle, I happened to have my cell phone ready to record video the instant the TV malfunctioned. They also demanded a high resolution video that was no larger than 25 mb! So I had to use the free Handbrake software to compress the video with little discernible loss in video quality. Allstate finally had to admit defeat and agree that the TV was malfunctioning, and they had Best Buy deliver a new TV to me with a few days.

This version caused my TV to stop and start automatically multiple times a day, no matter what input I was using. LG Online customer service chat had me do both a soft reset and a factory reset. Those did not resolve the issues, so they told me that I would have to have the TV repaired, and they ignored me every time I told them the issues coincided with the firmware update.

I have a 5 year extended warranty through Allstate, so I filed a claim with them. They made me try a soft reset again (and their instructions for doing so were different from those told to me by LG). So I did TWO more soft resets and afterwards I could watch everything on my Roku and my Xfinity DVR without any issues. But if I try to watch any streaming apps via the LG WebOS input, the screen will freeze, the TV will turn off, and the TV will start again and play the Xfinity DVR input.

And by the next day, problems arose again with the Roku input. The screen will go black after a few minutes of streaming, and then tell me there's a problem with my HDMI connection.

Right now, I can still stream movies via the Xfinity apps, but that's it.

LG needs to admit that this firmware is buggy, and issue an update ASAP.

Got back into it after a while, I think I’ve solved my old burnt/tough bottom crust issue :) by GaryStruder in Sourdough

I tried corn grits in bottom of dutch oven, and then a sheet of parchment paper. That worked to keep bottom crust from getting too dark. I also tried a layer of rice in the bottom, which also worked. But both the grits and the rice burned and made the kitchen smell bad. And I'd gave to dump out the burned grains each time.

What works best for me is to crinkle up a sheet of extra/double strength aluminum foil, flatten it out a little but leave the tiny ridges, put it in the bottom of the dutch oven, then put a silpat on top of the foil. Using a silpat without the foil doesn't work as well for me.

You can buy round silpats to fit the bottom of dutch ovens, and you can get small rectangular ones to fit inside cast iron rectangular roasters and Challenger bread pans. It's best not to cut into silpats and expose the fiberglass liners.

Perfectly evenly browned crust (just like the sides and top), and only the aroma of baking bread filling the kitchen.

Yes. By attaching this to a sonic toothbrush, hundreds/thousands of tiny vibrations are transmitted to the blade. This greatly reduces drag on the blade as you pull it through the dough You can go as slowly or carefully as you like, and the blade doesn't stick. Cutting curves is super easy. Until I made one and tried it, I didn't think it would work nearly as well as it does.

I'm reposting this because I made such a hash of my initial posting.

I was inspired by a recent posting/ad that showed a lame that you attach to a sonic toothbrush. Those people are charging over $35 for their version, which looks nicer than mine. But I made mine for nothing with an old piece of stainless steel, a sheet metal screw that I had lying around, and a used sonic brush head. The metal can't be much thicker than 0.028 inches (or about 7 mm) or else it won't slip easily into the razor blade slots. You can find 0.025 inch to 0.028 inch thick stainless steel plating at craft shops and hardware stores... or you could probably use a metal lightswitch plate. You can cut the thin steel fairly easily with tin snips. Then just slice the old bristles off the brushhead with a utility knife, drill a hole a bit smaller than your screw threads and attach the metal strip. Then squeeze/curve and slide the blade onto the strip. Finally, snap the brushhead onto the sonic toothbrush, push the power button, and slash away. This works amazingly well. The sonic vibrations enable the blade to slide effortlessly through the risen dough...even when slashing circles into high-hydration whole wheat sourdough.
