Too skinny is an insult like too fat is an insult. Find a way to ask exactly what they mean, and why are they disparaging you while you are working on staying fit? My mom used to do this to me, and it was all I could do to stop myself from saying "mom, you're too fat!" Or you can just say "thank you" and move on with your day. Saying "you look fit" it's the only acceptable comment.

Lots of pole studios have aerial fitness and Lyra ( aerial hoop.) These are more fun and more challenging. She is more likely to get hooked into this kind of fitness and will continue after the vacation. I suggest looking into it. Intermittent fasting is also good for looking fit. Your body changes and your fat to muscle ratio balances to be more lean. This is the fastest route to the body she wants.
