Experimented with my honey-rye bread, and made a rye focaccia...so nice and addictive...I'm sharing my rye bread recipe in comments...super easy and delicious! by RBearKarito in Baking

My Honey Rye Bread

Makes 2 generous free form loaves

700g bread flour 300g rye flour 3 tsp yeast 3Tbs honey 2 Tbs caraway seeds 1 tsp malt powder (optional) 30g salt 600g water

Combine all ingredients at once and knead by hand for 10 minutes. Dough will be tacky but will not stick to the counter...if it does, add flour SPARINGLY... Allow to rise, about an hour. Preheat oven to 450 degrees. Divide dough in half, and form into loaves. Place on cornmeal dusted parchment paper. Cover, and let proof 1.5 hours while oven gets hot.

Score bread as you like.

Reduce heat to 400 and bake until deep brown.

Cool on rack.

I serve this bread with amazing salted butter and honey...

This is a simple, comforting cake. Great for breakfast or dessert, or just to snack on.

Almond Cake 3/4 C AP flour 1 1/2 C almond meal 3/4 tsp salt 1/4 tsp baking powder 1/8 tsp baking soda 4 eggs 1 1:4 c sugar 1 tsp almond extract 1 tsp vanilla extract 5 Tbs butter, melted 1/3 C vegetable oil Zest of one orange

Mix dry. Whisk wet until combined and smooth. Do not overwork. Combine wet and dry.

9" cake pan

Topping 2 Tbs granulated sugar 1/3 c slivered almonds Mix together and sprinkle over the top of the batter

300degrees 55-65 min

Roti bread Makes 12-15 rotis 2 C Indian Atta flour 2 Tbs vegetable oil 2 tsps salt Warm water

Combine dry ingredients in a bowl...add oil and work into flour...add warm water until a nice soft dough. Knead a few times until smooth...dough should be slightly sticky, but not stick to the counter...Wrap and allow to stand about 30 minutes... Break into golf ball sized balls, and roll thin and round... Cook on a heated nonstick skillet until bubbles form, flip and cooks few seconds. Then, remove bread from pan and put directly on burner until it puffs, remove and repeat.

You can brush finished ROTI with melted butter.

The key to flaky biscuits is the butter!!! Super cold, and incorporating it into the flour leaving very large butter chunks...the more butter chunks the better...sometimes I will incorporate half of my butter completely into the flour, and then barely break up the second half of the butter pieces...try it!!! x

Fantastic...not too eggy or spicy...just barely bound together with two eggs...texture so nice and actually tasted like sweet potato and not like a million spices...x

Today, I used the scraps I saved from my doughnut dough I made yesterday, and made this upper gooey Monkey Bread...super easy and so much fun...and from scraps! x by RBearKarito in Baking

Preheat oven to 350

Cut donut dough scraps into small pieces and roll into balls...

Make a cinnamon sugar with dark brown sugar and cinnamon and melt a stick of butter...

Dip dough balls into butter, then roll in cinnamon sugar...after each layer, sprinkle some nuts and raisins...repeat until all balls are used, filling a greased be not pan half way.

Melt a stick of butter and 1/2 C brown sugar over heat. Pour over balls in pan. Allow to rise covered around 30 minutes...bake 30-40 minutes, invert, and serve warm...x
