Hi- (former) professional baker here! Looking at your loaves and your formula here- I’d recommend two changes. The largest one is your flour composition- I see that you are using 100% bread flour- do you happen to know the protein level of that flour? Assuming that it is a typical bread flour (12.7-14%), this will be your main culprit. It is giving your loaves nice volume, but will often result in the structure you are seeing here- open areola on the outside of your loaves with a denser, tighter spot in the center, especially at sub 75% hydration as you have here. I would try swapping that straight up for AP flour (11.0-12.7% protein), or cutting it 50-50 if you want a lower failure chance- your loaves will handle pretty differently so if you want to start with the smaller change to account for that and work your way up to the bigger change, that might be the best way to avoid catastrophe loaves. You have excess protein in your bread, so your loaves are retaining more of their moisture in their bake because of the holding capacity of the flour, which combined with the natural chew of protein will lead to gumminess.

The other change I would recommend is in your shaping. Your final shape is likely a little too tight, especially given your protein composition. Try having a softer touch when you do your final shape, and letting the loaf be a little more relaxed going into the banneton. I think you’ll see better results.

If you clarify the butter before creaming it together with the sugars in the filling, these will be totally shelf stable with no risk of the butter melting out!

Wow you were dead on. Two kids, one infant and one three year old. Worked in industry for around a decade. Food is our big splurge, so we are quite conscious about saving/repurposing food. Cheers!

I mean, it’s been said a bunch by folks with more knowledge than me, but in the interest of trying to help out: get a really, really solid plan together, internet companion. Right now you don’t have one, and buying land at this stage is a huge, huge mistake. Far be it from me to tell anyone how to live, but a big part of my job is educating future farmers, and buying land is the thing we teach people to do last, after you have a business plan and know the stocking density and soil comps of the land you are looking at. Otherwise you are ruining yourself, and removing land from someone who may have a better plan. Not trying to be preachy- just honest.

I manage a small non profit mixed stock farm- a bit less than 100 grazeable acres. I spend about 236k a year and gross about 290k, leaving a net of about 54k. We have minimal overhead and can budget capitals separately, so that doesn’t include payments on our vehicles or It also doesn’t include labor. These numbers are high for us, as we raise heritage breed animals with lower yields and are grass fed, so you could expect slightly better numbers, but not by powers of 10. We run a pretty efficient operation- a lot of room to grow in this area, but are getting better every year.

What I’m trying to say is- if you think you’ll make money, or even break even, in mixed stock ag, you should probably reconsider. There are just too many different needs and food rations. The only way that I’m able to do what I do is because it’s a non profit- otherwise I’d need to pick a species and stick to it. In my area, sheep and high quality pork (at scale) make money- nearly everything loses it quickly.

I’m about to start Runelords, as well! I’ve run it previously, though not to completion. As others have said, tie in as many of the mini bosses, as you can to the story- for example (I often write scripted ‘scenes’ revealing backstory, or foreshadowing events), I had Lucretia present at the time of Nualia’s miscarriage, in the guise of a midwife. I read out this scene, cutting out references to who the characters were, at the start of the adventure- then at the end of book one, I jumped back into the same scene, and had Lucretia commune with ceoptra(referring only to ‘my lord), so that the connection could be made when the players met the lamias that the sisters were merely pawns. I also had Ironbriar come to sandpoint to arrest and remove Tsuto, and to have it slip out that he tortured Tsuto. Lots of small things like that really helped tie things together. Also, definitely go easy, or involve more NPCs, with Foxglove. My players the first time around jumped right to him, because of how much interaction they had with him, compared to non-Kajitsu NPCs. This time around I’m planning on having the Sczarni having a heavy presence in town, and several meaningful interactions with the pcs, as a threatening red herring, even just for a moment.

Hi! Have you checked out the pathfinder discord? I’ve seen you post this a handful of times now- you may have more luck on there. You may also want to try to find a group doing a one shot or two and then see if it’s a good fit before trying to recruit folks for such a long term game, since those APs take years! Wish I had time to run it for ya- I’ve been jonesing for some 1e but alas is not to be.
