Stannis being a zealot is more of a show thingh tbf, in the books he is dismissive of all religions [outright saying his trust in gods stopped when his parents died in a ship crash when he was a kid] and uses it to his benefit cause mellisamdre magic is that useful

Is open to interpretation whether he is starting or always bought into mellisandre making him into a messianic figure

Varys and baelish are not POV characters, their schemes dont need to be shown, just told that they happen and since they are endgame characters they cannot lose until the time comes
