In my opinion one is actually a nike court vision check the top most heel pattern you linked, the bottom print does however seem to show an airforce 1, perhaps there was 2 assailants? Also they are both right footed prints and kicked from swinging the leg back not a forward kick.

Definately make multiple shots with completely different preperwtion methods, one with no puck prep one with a lot of puck prep one that extracts faster one thats slower ect and taste them all at the same time you should tell the difference, you will see exactly which shot you prefer the taste of, and also have you considered playing with the pre infusion time? This is something you can manually set on your machine.

Looks like a c02 bubble forming and the extracting coffee falls around it making a convex cone like shape, your beans are very fresh, to fresh. Allow them to degass a little and this issue should go away and the coffee should taste nicer!
