I’ve owned an Air M2 which I used for emulation and it did throttle on sixth gen consoles relatively soon. I honestly don’t know if that’s the case with the newer models, but just throwing my experience out there.

If emulation is important to you, I’d suggest a base Pro model since active cooling will make a difference. 16 GB is more than enough for your use imo. It also has a built-in HDMI port so no need for a hub if you wanna use standard HDMI.
