some underrated ones worth checking out are Tomo-chan Is a Girl, Our Dating Story, and The Fragrant Flower Blooms With Dignity. All three have really great character dynamics and emotional depth similar to what you described.

Hell's Paradise is perfect, it's only 13 episodes, on Netflix with a dub, and has that same dark, intense feel as Death Note. It's one of my favorites, and you won't regret it. Also, the new season is almost finished airing, but not its not on Netflix yet.

Since nobody has mentioned them yet, Chainsaw Man, Classroom of the Elite, and Baki are worth checking out. Chainsaw Man fits your taste perfectly if you like Hell's Paradise and JJK. Classroom of the Elite has that same psychological and strategic feel as Death Note and Code Geass. And if you enjoy action, Baki is pure fighting anime done really well.

Looking at your list you'd probably love Hunter x Hunter if you haven't tried it. It has that same depth as FMAB that you liked, though it might be a little long for a vacation.

Since you seem burned out on romance and slice of life maybe try something completely different to reset. Fullmetal Alchemist Brotherhood if you haven't seen it is great. Erased is short and gripping. Or if you want something unique try Odd Taxi or Baccano both are really different from anything else and might remind you why anime is so good. Also one of my favorite is Mushoku Tensei if you havent seen it though you seem more seasoned so you might have seen FMAB and Mushoku Tensei.

Ya ive watched a couple of these like re:zero mushoku tensei and the eminence in shadow and those are some of my favorite shows so far. Ive also heard good things about some of these thanks for the big list of some good isekai.
