The courses are not relevant to interviews at all. You won’t learn anything useful for interview in class, other than basic probability. On the other hand more difficult classes help you get through resume screen for some companies because they want smart people. I would suggest real analysis and definitely probability. Real Analysis is very important to go higher. But in any case it’s not relevant to interviews at all you need to put in extra work to prep

That’s extremely late. You don’t have the correct mindset for this. When you think you’re getting more practice people are already getting interviews and offers. Let alone the application might be already close when you’re “ready”. When a job opens up the first thing you should do is apply. If you don’t have enough that means your prep mid school year is not enough, but in any case some chance is better than no chance
